Mamaia’s old recipe, the only thing I changed instead of regular flour, I dredge the chicken thighs in rice flour so that it stays gluten free. Besides chicken this dish has mushrooms, tomatoes, red peppers, onions, green and black olives, fresh herbs and of course, Mamaia loved her garlic, so lots of fresh garlic.
Enough for 2 to 4 people, does not come with side dish but serves well over polenta, rice or mashed potatoes.
No time to cook? No problem! Serve it over egg noodles. Still delicious!
